Hawaij is a traditional spice blend from Yemen. It’s typically used in soups and stews but also has a variant for coffee. The blend is composed of a variety of Yemeni spices. The main savory ingredients are cumin, black pepper, turmeric, and cardamom. Hawaij means “mixture” in Yemeni and has long been a staple blend in the Yemenite-Jewish kitchen due to the large Yemenite community in Israel.
HOW TO USE
Hawaij can be used for soups, stews, chicken, fish, vegetables or as a rub for barbequed meat. When used for grilling, its best to rub the meat or vegetables an hour before to get the most flavour out of it. When used for (chicken)soup please be aware that your soup will never taste the same again.
