ORIGINS OF SUYA

It is believed that Suya originated with the Hausa people in Northern Nigeria, but became popular all over the country. The Suya spice blend is a special mix that is used to make the typical Nigerian Suya dish. A shish kebab (roasted skewered meat), but with a particularly African twist of a peanut-spice rub.

Suya is Nigerian street food prepared and sold by so called Suya men.Historical evidence suggest that across Africa, Suya and its compatriots originated from pastoral nomads – West African Fulani/ Hausas from Cameroun to Niger and parts of Sudan; and the North African Tuareg and Berbers. These groups travel with herds of likestock and often use the meat of selected animals for food and trade. It is thought that these were from a time when they sat around camp fires, cooking grilled meats, skewered on swords and daggers.

In Nigeria, the ‘Suya men’ are called Mallams – men, skillful in the art and spice of meat preservation and preparation. Every Mallam has his own special blend.

HOW TO USE

Suya is usually made with lean cuts of beef, however now that the spice has come into its own, it has been used to liven up roast potatoes and marinade chicken or fish for example.
